Experts say it’s “Not Safe” to eat Runny Egg Yolks

Americans are advised to avoid eggs with runny yolks due to increasing bird flu cases. Cook eggs thoroughly to kill any virus fragments. H5N1 has been observed in poultry and, for the first time, cattle in multiple states.

Health officials in Texas confirmed that a dairy farmer caught the virus, making him the second American to contract the disease.

The likelihood of contracting bird flu from eating properly cooked poultry products, such as eggs, is very low. The risk of infection increases when eggs or poultry meat are not cooked properly. To reduce the risk of exposure to the virus, it is recommended to use pasteurized eggs or ensure that eggs are fully cooked before consuming them.

Bird flu can spread to chickens from infected waterbirds through saliva, nasal secretions, and feces. This can contaminate the birds’ environment, including the eggs they lay. It’s similar to foodborne illnesses like salmonella and E. coli, which can infect humans through undercooked animal products.

Health officials recommend customers be cautious about consuming eggs with runny yolks, such as sunny side up, poached, soft-boiled, and over easy. In case of avian flu concerns, eggs should be cooked until both the white and yolk are firm. This ensures that the egg reaches a temperature that is likely to kill any viruses present.

It is recommended to cook dishes containing eggs to an internal temperature of 160 F (71 C) to ensure safety. This is because cooking eggs to this temperature effectively kills bacteria and viruses, including the bird flu virus. If eggs are not cooked thoroughly, such as if they are runny or soft-boiled, the virus may not be completely killed. In such cases, if the eggs are contaminated, it could potentially lead to infection.

The biggest egg producer in the United States, Cal-Maine, recently announced that it will have to kill 2 million birds after detecting a virus in its flock. Authorities in Michigan are now advising people to take extra precautions to safeguard their flocks. As a result, there is a possibility of a shortage of eggs and increased prices in stores.

Outbreaks of avian influenza in poultry can lead to significant economic impacts on the food industry due to the culling of infected birds and disruptions in the supply chains of poultry products.

Twelve farms in six different states have reported H5N1 infections in their cows. This includes five farms in Texas, along with farms in New Mexico, Michigan, Ohio, Idaho, and Kansas. Furthermore, cows in Iowa are currently undergoing testing for the virus. The infected cattle are exhibiting signs of lethargy, reduced appetite, and decreased milk production, but they are not dying from their infections.

It’s unclear how the cows got infected, whether the virus is spreading between them, or whether they were infected by a single source, such as their feed.

Many cases across the country have been traced back to farms in Texas. While various mammals are being infected, experts are primarily concerned with pigs. This is because pigs have the same receptors in their lungs as humans, which means an outbreak among them could predict a similar episode in humans. However, there are currently no recorded infections in pigs.

According to the CDC, some individuals infected with avian influenza may not exhibit any symptoms. Those who do typically report flu-like symptoms such as fever, cough, sore throat, body aches, headaches, and fatigue.

Serious complications of the illness include respiratory failure, encephalitis (inflammation of the brain), acute respiratory distress syndrome (ARDS), and multi-organ failure.
